Difference Between Wheat Flour and Flour

Flour and wheat flour are the same thing, and flour is the flour formed by peeling and grinding wheat. Wheat flour includes low-gluten wheat flour, strong-gluten wheat flour, and medium-gluten wheat flour.

Wheat is made up of bran, germ, and endosperm. The bran is the hard outer layer of wheat, which is usually removed by grinding white flour. The "flour" we often say refers to the powder formed by peeling and grinding wheat. Wheat peeling is mainly to remove the bran and embryo, and the remaining endosperm becomes flour after grinding.

Some people also say that wheat flour is directly ground from wheat, with the outer skin and middle part of wheat, and is a coarse grain. In fact, this should be called whole wheat flour. Whole wheat flour contains all the components of wheat in flour, and the bran is more removed. Little (or not at all) flour that is made by mixing together the embryo, endosperm, and bran. Those little brown flakes you see in whole wheat flour you buy are wheat bran. Whole wheat flour better retains a variety of nutrients and active ingredients in wheat.

Among the national standards, there is only the "National Quality Standard for Wheat Flour", which is also what we call the national standard for flour. So, usually flour and wheat flour are just different names for the same thing.
